My plate runneth over...
I went out of town this past weekend, so I needed something quick for dinner. Yes, it's white rice and the sodium is high on the prepackaged stuff, but sometimes I just don't feel like preparing something when laundry is calling from long weekend. And I love Indian, so the yellow lentils, peas & potatoes and basmati rice hit the spot.
